2 tbsp. Mazola oil
3 tbsp. tomato juice
3 tbsp. vinegar
1 tbsp. salt

Directions:
Directions:
Loosely fill quart jar with chunks of fish (no need to de-bone). Mix 2 tbsp. oil, 3 tbsp. vinegar and 1 tbsp. salt together and add to each jar. Add 3 tbsp. tomato juice last. Seal as you would for boiling water bath and process for 3 - 3½ hours. Bring to a boil and then turn down to a simmer. Or, process in pressure canner for whatever it says for meat.
