1 large container of bread crumbs (I use Aurora as they contain spices and Romano cheese)
1 container of asaigo or fresh parmesan cheese - approx. 16 oz.
2 tbsp. fresh oregano
fresh parsley to taste
1 whole garlic (6-8 buds in one) chop very finely
½ tsp. each salt & pepper
3 lbs. veal
6 eggs

Put first 6 ingredients on the list in food processor and pulsate to mix together. Pound veal to tenderise if not already done. Cut each piece to your preference in size. In bowl, beat eggs well. Put some bread crumbs on a plate. Dip each piece of veal in egg and let excess drip off; dip in bread crumbs and continue until all pieces are done. In a skillet frying pan, put about half of 4 L vegetable oil. Heat at 400º until oil gets hot (do not leave unattended). Put veal in frying pan. You only need to cook each piece for a couple of minutes on each side. Remove when done and put on a plate covered with a paper towel to help take out excess oil. Enjoy.
