"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Cook beef over medium heat until the meat is no longer pink. Add the onion during last 5-6 minutes before the beef is cooked. Drain fat. If using precooked beef saute the onion in water, drain and add to beef. Empty the beef and onion mixture into a large bowl and add spices until the desired taste is achieved. Add the salsa, corn and Miracle Whip and blend ingredients together. Mix the cheddar and Monterey Jack cheese together in a separate dish. Grease a large casserole dish. Layer half the ground beef mixture in the bottom of the dish and then half the crushed tortilla chips on top of the ground beef. Layer half the blended cheese on top of the tortilla chips. Repeat the layering process with the remaining ground beef, tortilla chips and cheese. Cover the casserole dish and place in a 350º oven for 35-40 minutes. Chop the lettuce and dice the tomato. Spoon additional salsa sauce and sour cream onto your plate portion and add the lettuce and tomato to the top of your portion.
