3 cups white beans
¼ lb. bacon
1, 28 oz. can tomatoes
2 cups chopped onions
¾ cups ketchup
¾ cups fancy molasses
⅓ cup packed, brown sugar
1 tbsp. dry mustard
½ tsp. salt & ¼ tsp. pepper

Cover beans with 3 times their volume of water. Bring to a boil. Boil gently for 2 minutes. Remove from heat. Cover. Let stand for 1 hour. Drain, discarding liquid. Return soaked beans to pot along with 3 times their volume of fresh water. Bring to a boil. Reduce heat and simmer, covered, for 30 - 45 minutes or until tender. Drain, reserving 2 cups of cooking liquid.
Meanwhile, dice bacon, set aside. In bowl, mash tomatoes. In bean pot or 4 litre casserole, combine beans, reserved cooking liquid, bacon, tomatoes, onions. ketchup, molasses, sugar, mustard, salt and pepper. Bake covered for 2½ hours at 300 degrees. Uncover and bake for 1 to 1½ hours longer or until sauced is thickened.
