3 Tbsp butter
5 red potatoes cut into 1” cubes
1.5 lbs boneless, skinless chicken thighs or breasts
2 Tbsp Dijon mustard
1 Tbsp balsamic vinegar
¼ cup chicken broth
Handful of green beans (fresh or frozen)

Add chicken to a freezer bag with mustard and vinegar and set aside to marinate. (I’ve done anywhere from 5 minutes to 2 hours before and it comes out great either way). In a large skillet (preferably cast iron), melt butter. Add potatoes and stir to coat. Season with salt and pepper and saute for a few minutes. Then push potatoes to one side and add chicken. Cook for 2 minutes, then flip the chicken. Add ¼ cup of broth to the pan, and cover with a lid. Cook for 8 minutes, stirring potatoes occasionally. Then add a handful of green beans on top of potatoes and cover again. Cook for 5 more minutes. Season with S&P to taste, then serve.
