Directions: |
Directions:Stir cream cheese in bowl and add chopped olives. Mix well. Spread mixture on one tortilla (not too thick but enough to cover it). Add another tortilla on top and spread with the cheese mixture. Roll tortillas tightly, wrap with plastic wrap and refrigerate. Preheat oven to 400 with rack in lower third. Slice tortillas about ¼" thick. Lightly spray baking sheet with oil. Bake for approx. 4 -5 minutes until rolls are just slightly golden, remove pan from oven, lightly spray the rolls with oil and then flip them and brown lightly on other side for a couple of minutes. Cool on rack for a few minutes before serving warm or cold with sour cream and salsa. Note: you can freeze these rolls, just wrap tightly with plastic wrap and put in freezer bag. |

Notes: Bill's friend Rick had a surprise birthday party for his son and his sister-in-law brought these to the party. They were gone before we could even have seconds and she kindly shared the recipe with me.
