1 graham cracker crust or baked pastry pie shell
1/2 cup sugar
2 Tbsp. cornstarch
1/8 tsp. salt
1 1/2 cups milk.
2 egg yolks, beaten
1 tsp. vanilla

Directions:
Directions:
Beat the two egg yolks in a mixing bowl and set aside. In a heavy saucepan or Dutch oven, mix together sugar, cornstarch and salt. Add milk and cook until thick. Pour a small amount of filling into the egg yolks, whisking the yolks constantly. Return the egg mixture back into the filling and cook until thick. Add vanilla. Pour into pie shell. Cool and refrigerate.

To make Banana Cream Pie, slice bananas in bottom of crust before you add filling. Make meringue according to its recipe directions if desired and spread on hot filling. Bake according to meringue recipe directions. Cool and refrigerate.

To make Coconut Cream Pie, add 1 cup sweetened flake coconut to filling. Prepare meringue and spread on hot filling. Sprinkle coconut on top of meringue and bake according to meringue recipe directions. Cool and refrigerate.
