1 head romaine lettuce
½ a cucumber
2 stalks celery
½ cup olives
1 coloured pepper
2 - 3 cups favourite potato salad
3 tbsp. olive oil
2 tbsp. vinegar
Feta cheese

Directions:
Directions:
Cover a large platter with potato salad. Tear romaine into bite-size pieces and layer over potato salad (which has already been made ahead). Chop celery, cucumber and peppers and spread over lettuce. Spread sliced olives and Feta cheese over the lettuce and veggies then pour on olive oil and vinegar. Crumble Feta cheese over the salad and enjoy. Eat immediately.
