1 clove garlic
¾ cup olive or salad oil
2 cups croutons
2 large heads romaine
½ tsp. salt
Freshly ground pepper
1 egg
¼ cup lemon juice
¼ tsp. Worcestershire sauce
½ cup grated Parmesan cheese

Light Caesar Salad Dressing:
1. Crush garlic in small bowl. Add oil and let sit for several hours.
2. Tear romaine in bite-size pieces and put in large salad bowl. Sprinkle with salt and pepper.
3. Break egg into bowl with garlic and oil. Add Worcestershire sauce and cheese. Toss until every leaf is coated, Add croutons, toss and serve immediately.

Dana Small's Creamy Homemade Caesar Salad Dressing:
1 cup extra virgin olive oil
juice and zest of two lemons
1 heaping spoonful of Dijon mustard
½ cup of grated Parmesan cheese (fresh tastes better)
few cloves chopped garlic
salt and pepper
Mix together until well mixed. The longer you mix it, the creamier it becomes. It's also good lightly shaken.
Be sure to put fresh basil in your Caesar salad. It really adds a nice flavour.
