⅓ cup apple cider vinegar
⅓ cup soy sauce
3 tbsp packed golden brown sugar
2 tbsp oil
1 tbsp peanut butter
1 tsp curry powder
˝ tsp red pepper flakes
1 pack Asian noodle soup mix
1 tbsp (15ml) butter
8 cups (2L) thinly sliced Bok Choy
1 cup (125ml) shredded carrot
˝ cup (125ml) diagonally sliced green onions
1 red bell pepper, thinly sliced
˝ cup (125ml) coarsely chopped roasted salted cashews

1. For the dressing - Pureé the first 7 ingredients in a blender until smooth, set aside
2. Crumble noodles from soup mix, reserve seasoning packet for another use
3. Melt butter in a frying pan and add noodles
4. Cook over medium heat, stirring frequently, until lightly toasted
5. Transfer noodles into a large bowl and cool to room temperature
6. Add remaining ingredients (bok choy through to cashews) to noodles
7. Pour dressing over salad and toss to coat
