Double the recipe for pizza dough
1 to 1½ c. pizza sauce
1½ c. shredded part-skim mozzarella cheese, divided
¼ c. grated Parmigiano-Reggiano cheese
Pizza toppings such as pepperoni, sausage, etc. are optional

Directions:
Directions:
Prepare dough as directed in Pizza Dough recipe, leaving it in one ball. After removing the dough from the refrigerator, allow it to stand (still covered) for at least an hour until it comes to room temperature.

Lightly oil a 12 x 16 inch baking pan. Press dough into bottom and up the sides. Cover loosely with plastic wrap and allow to raise while oven is heating. Place an inverted baking pan or baking sheet on bottom rack of oven. Preheat oven to 450º F.

Spread half the mozzarella over the dough; top with pizza sauce, whatever toppings you choose, Parmigiano, and then remaining mozzarella. Place the pan on top of the one already in the oven and bake for 20 to 30 minutes, until crust is golden brown. Allow to rest for 5 to 10 minutes before cutting into rectangles for serving.
