¼ c. creamy peanut butter
¼ c. water
2 tbsp.soy sauce
1 tbsp. apple cider vinegar
2 tsp. grated fresh ginger root
2 cloves garlic, chopped
1 lb. boneless skinless chicken tenders
3 c. fresh broccoli florets
fresh lime
optional;
chopped peanuts
green onions, sliced diagonally
red pepper flakes

Directions:
Directions:
Heat oven to 400º. Spray 15"X10"X1" sheet pan with cooking spray. In large bowl, mix peanut butter, water, soy sauce, vinegar, ginger root, and garlic using a whisk. Add chicken and broccoli to bowl, toss to coat. Spoon chicken mixture evenly onto sheet pan. Bake 20-25 minutes or until chiclen is tender and no longer pink in center and broccoli is crisp tender, Stir gently before serving. Squeeze lime over chicken and broccoli. Garnish servings with peanuts, green onions and pepper flakes.
