Crust: (Can also use purchased pastry sheets or pie dough.)
4 cups flour
1 tsp. sugar
2 tsp. salt
1 3/4 cups white Crisco solid shortening
1/2 cup ice water
1 Tbsp. vinegar
1 egg

Filling:
8 baking apples such as Granny Smith, sliced into bite-sized pieces
1 cup sugar
2 Tbsp. flour
4 tsp. cinnamon, approximately

Directions:
In a large bowl, mix together flour, sugar, salt, and Crisco with a fork or pastry blender. Separate crumbly mixture in the center of the bowl to form a well.

In a small bowl beat together ice water, vinegar and egg. Pour into well, mix. Knead into dough. Separate into two balls. Chill. Put down a large sheet of parchment paper on a countertop. Place one dough ball in center and press down. Cover with a large sheet of wax paper. Roll out dough to be big enough to cover bottom of large cookie sheet (11x14) plus up sides. Spray pan lightly. Place dough in pan. Roll out the second dough ball big enough to cover the pan. Set aside.

Cover pie dough in baking sheet with sliced apples. Sprinkle with sugar and flour. Using a shaker, sprinkle entire apple surface lightly with cinnamon. Cover with 2nd layer of crust. Using a paring knife, put small slits in the dough around the whole top. Bake for 45 minutes. Cool. Refrigerate.
