½ cup salad oil
¼ cup red wine vinegar
1 large clove garlic, crushed
2 tsp Worcestershire sauce
¼ tsp salt and dash pepper
½ cup shredded Parmesan cheese
1 oz blue cheese, crumbled (optional)
1 head romaine lettuce/spinach or any leafy greens desired
1 egg - optional

For Dressing:
Shake together oil, wine vinegar, Worcestershire, minced garlic salt and pepper.
refrigerate a few hours or overnight to blend flavors. You can add a beaten raw egg to this for authentic dressing - but this is not necessary.

Break up greens in large bowl . Sprinkle in cheeses

toss lightly with dressing. Add Croutons.

For variation, you can add, mushrooms, onions, hard boiled eggs., etc.....

For home made croutons....
Cube french or Italian bread into 1 inch pieces.
Melt butter, garlic and salt and pepper,.
put cubes on cookie sheet, and drizzle butter over them' Bake in 400 degree oven until lightly browned, stirring several times throughout cooking time.
I store this in air tight plastic bags and freeze.
