16 racks of beef ribs (1.75 lbs. each)
4 ozs. soy sauce
Tony Chachere's Creole Seasoning
4 ozs. liquid smoke
1 tbl. chopped fresh rosemary
3 qts. water
Barbecue sauce of choice (with smoked flavor)

Directions:
Directions:
Coat each rack with soy sauce and rub both sides with Tony's Seasoning.

2. Stack racks together vertically in large roasting pan. Mix liquid smoke, rosemary and water and pour into pan.

3. Roast covered at 300 to 350 degrees for 3 to 4 hours. Meat should fall off the bones.

4. Cool in refrigerator overnight.

5. Separate racks from each other and coat with barbecue sauce of choice.

6. Before serving, heat the ribs on the barbecue pit until warm.
