1 box Jiffy corn bread mix
1 can creamed corn
1 can corn, drained
8 oz. sour cream
1 egg lightly beaten
1 stick (¼ lb.) butter melted
Optional: Mix in 1 or 2 jalapeño or serrano peppers finely minced, seeds removed

Directions:
Directions:
Preheat oven to 350º. Spray an 8 x 8 inch baking dish with non stick baking spray.
Put all ingredients in a bowl, add butter last; mix lightly, do NOT beat.
Bake at for 1 hour; top with a cup of your favorite shredded cheese for the last ten minutes of baking.

Can be served cold or warm for dinner
Cut into small pieces, very rich :)

This came from a gentleman in Rio Verde AZ, when we were living there. I believe it was printed in the community newsletter. I had never heard of such a thing, but it sounded kind of good so I tried it. Yummy! I'm assuming he said "trust the recipe" because you really can't believe it'll turn out good when you're dumping it in the bowl to mix.

I always make a double batch but bake it in two small pans rather than one large one because it just seems to bake better that way.
