Ingredients: Muffins: 1½ c. all-purpose flour ¾ c. granulated sugar 2 tsp. baking powder ½ tsp. salt 1 egg ⅓ c. vegetable oil ⅓ c. buttermilk 1 c. fresh blueberries
Topping: ½ c. granulated sugar ⅓ c. all-purpose flour ¼ c. butter, cubed 1½ tsp. cinnamon

Directions: |
Directions: Preheat oven to 400º F. Line muffin tins with cupcake papers or grease tins with butter.
Combine topping ingredients together in a small bowl. Mix together with a fork and set aside.
Combine flour, sugar, baking powder, & salt in small bowl and set aside. Place the ⅓ c. vegetable oil into a 1 c. measuring cup; add the egg and enough milk to fill the cup. Add this mixture to the dry flour mixture and stir to combine. Fold in the blueberries. Fill muffin cups right to the top and sprinkle with crumb topping mixture.
Bake for 20 to 25 min. or until golden and toothpick inserted in center comes out clean. Cool on a rack. Serve warm or at room temperature. |

Notes: This recipe was given to me at the Flagler Beach farmers market by the woman selling fresh blueberries. I don't know her name, but she most definitely knew how to make muffins. They truly are to die for! You can make them regular muffin size or in the extra large size.
