4 TABLESPOONS OLIVE OIL
3 CLOVES GARLIC, MINCED
2 POUNDS PORK LOIN
¼ POUND BACON STRIPS
1 GREEN APPLE, SLICED
6 FRESH DRIED FIGS, SLICED
½ CUP MARSALA
3 TABLESPOONS FLOUR
3 TABLESPOONS BUTTER ROSEMARY SPRIGS FOR GARNISH

Directions:
Preheat oven to 375. In a large roasting pan, combine the olive oil and the garlic. Wrap the pork with the bacon strips, transfer to the pan, and place in the oven for 15 minutes, or until the meat is golden. Remove from the oven and add the apple and figs, reserving some for garnish. Baste with the Marsala and return to the oven for 40 minutes or until desired doneness.
Remove from the oven, remove the pork from the pan and set aside to allow its juices to redistribute. Add the flour and the butter to the pan and stir until the sauce thickens. To serve, slice the roast, drizzle with the reduced sauce, and garnish with the rosemary, remaining figs and apples.
