1 Pear
2 Demi-Baguettes
2 shallots
1/4 oz. Rosemary
2 T. Garlic Herb Butter
12 oz. Skirt Steak
3 t. Balsamic Vinegar
1 Chicken Demi Glace
2 oz Arugula
2 oz Ricotta Salata

Wash and Dry all produce. Preheat oven to 400 º. Halve and core pear, cut into 1/2" wedges. Cut one baguette into 1/2 " cubes. Place pear and baguette cubes on opposite sides of foil lined baking sheet. Toss each with salt, pepper and drizzle of oil. Bake in oven until baguette is risky and pear is softened.

Halve, peel and thinly slice shallots. Pick and finely chop rosemary to make 2 teaspoons. Melt garlic herb butter in microwave and then drizzle on other baguette once sliced in half.

Once baguette and pear have baked 8-10 minutes remove cubes from oven. Flip pear and continue baking another 10-15 minutes.

Heat pan with oil and season steak all over. Add steak to pan and cook to desired doneness. Remove steak from pan and set aside to rest. Add more oil to pan then add shallots and cook, tossing until lightly browned. Stir in 1/2 cup water, 1 t. vinegar and demi-glace, scraping up and browned bits on bottom. Simmer until thickened. Season with pepper.

While shallots cook, placed buttered baguette halves cut side up and bake until golden brown. Meanwhile, toss arugula, baguette cube, 2 t. vinegar, 1 T. olive oil. Season with salt and pepper.

Slice steak against grain. Divide salad and garlic bread between plates. Top salad with pear and crumble ricotta salt over.
