½ CUP OIL
¼ CUP FINELY CHOPPED PARSLEY
2 TABLESPOONS MINCED GARLIC
2 TABLESPOONS FINELY CHOPPED BASIL
1 TABLESPOON MINCED GINGER
2 TABLESPOONS LEMON JUICE
2 TEASPOONS KOSHER SALT
1 TEASPOON CRUSHED RED PEPPER
2 ½ LBS LARGE SHRIMP

DIPPING SAUCE
1 TABLESPOON OIL
1 TABLESPOON MINCED GINGER
1 LARGE GARLIC CLOVE, MINCED
3 STALKS FRESH LEMON GRASS, INNER BULB ONLY, MINCED
1 ½ LBS TOMATOES, PEELED & SEEDED, CHOPPED
1 TABLESPOON LIME JUICE
2 TABLESPOON CHOPPED CILANTRO

Marinate shrimp in first 8 ingredients 2-4 hours, covered, refrigerated. Meanwhile, make the sauce in a medium saucepan, heating the oil, stirring in the ginger, garlic, and lemon grass and cook about 2 minutes. Add the tomatoes and cook over moderate heat about 10 minutes. Let cool to room temp, then stir in the lime juice and cilantro. Season with salt. Grill shrimp on skewers and serve with the tomato sauce as a dip, or poured over.
