For the raita:
1 cup plain yogurt
½ cup peeled, seeded and finely chopped cucumber
Kosher salt
1 teaspoon lime juice
Black pepper of cayenne
Sugar or honey
Paprika

Meatballs:
½ cup white bread, crust removed (about 1 slice)
1 lb boneless, skinless chicken thighs
1 tablespoon finely chopped tarragon, basil and mint or other herbs
2 tablespoons minced chives
1/8 teaspoon black pepper
1 teaspoon kosher salt
1/8-1/4 serrano chilies minced (optional)

Directions:
Drain yogurt, and lightly salt cucumber for 20 minutes. Mix yogurt and cucumbers, add lime juice, salt and pepper and paprika. Cover bread with milk and soak while grinding chicken in processor. Squeeze bread to wring out milk, then place in mixing bowl. Mash thoroughly and add chicken, chives, herbs, salt, pepper and chilies. Make balls and fry in oil, turning every few minutes, 7-10 minutes. Transfer to plate and serve with raita.
( ground chicken can be used but it’s white meat, not as juicy as thighs)
