2 oz. dried apple slices
8 (2oz. pieces) boneless pork loin
1 cup flour
1 large egg
¼ cup grated Parmigiano or Grana Padano cheese
1 ½ tablespoons water
1 cup coarse whole wheat bread crumbs
Fine sea salt
Ground pepper
½ cup olive oil for frying

Fine chop half the apple slices. Gently pound pork to 1/8 inch thick. Firmly press chopped apple into both sides of cutlets. Transfer to a plate and chill, covered, for 20 minutes.

Put flour in a large shallow bowl. Lightly beat eggs, cheese and water in another shallow bowl.. Mix bread crumbs and pinch of salt and pepper in third shallow bowl.

Season 1 cutlet with salt and pepper, dredge in flour. Dip cutlet into egg/cheese mixture, then dredge both sides in bread crumbs, pressing lightly to adhere. Repeat with each cutlet.

Heat oil in large skillet over medium high heat. Add 2 cutlets, reduce heat to medium and fry, turning once, until golden brown and cooked through, about 2-3 minutes per side. Transfer to paper towels to drain. Repeat with remaining cutlets.
Serve with remaining apple slices.

(Can be used with chicken breasts instead of pork)
