12 OZ . new or purple potatoes
4 boneless chicken breasts
fine sea salt, ground pepper
3 tablespoons olive oil
5 tablespoons unsalted butter
2 semi-tart apples, peeled, cored, cut into eighths
1 garlic clove, smashed and peeled
1 lb escarole, leaves torn
½ cup dry white wine

Directions:
Directions:
Cook potatoes, cool, smash slightly. Season chicken and place in skillet over medium high heat, cook 5-7 minutes, turn cook for 3 minutes. Transfer to baking pan, cover with foil, and place in oven at 250.
Clean skillet, add 2 tablespoons butter, add apples in single layer, cook until brown, about 3-4 minutes. Transfer to plate. Add 2 more tablespoons butter, add potatoes in single layer and cook about 2 minutes per side. Season, transfer to plate.
Add garlic, escarole, increase heat to high until wilted. Add wine and cook, until reduced, add apples for about 2 minutes. Remove from heat.
Remove chicken from oven and add to skillet with juices.
Divide potatoes on plates, add chicken and escarole. Reheat skillet, add remaining butter, boil to sauce, about 1 minute. Season and pour over chicken.
