1 lb ground lamb
2 teaspoons olive oil
2 cups vertically sliced onion
½ cup diagonally cut carrot
¾ teaspoons ground cumin
¾ teaspoon cinnamon
½ teaspoon ground coriander
¼ teaspoon red pepper
2 cupa low fat chicken broth
½ cup golden raisins
3 tablespoons tomato paste
1 ½ tablespoons grated lemon rind
¼ teaspoon salt
1 (15 ½ 0z) can chick peas, rinsed and drained
½ cup chopped cilantro
1 tablespoon lemon juice

Directions:
Directions:
Heat skillet over medium heat, add lamb and cook six minutes. Remove lamb, discard drippings. Add oil, swirl to coat, add onion and carrot, sauté 4 minutes. Add cumin, coriander, cinnamon, and pepper, stir. Add lamb, broth and next five ingredients, bring to boil. Reduce heat and simmer for 4 minutes. Remove from heat, stir in cilantro and lemon juice

Serve over rice or couscous.
