4 tablespoons olive oil, divided
1 small onion, diced
20 0z. pumpkin or butternut squash, diced
salt and freshly ground pepper
2 tablespoons heavy cream, plus extra
8 oz. Italian sausage, casings removed, crumbled
1 lb linguine
¼ cup Parmigiano-Reggiano cheese

Directions:
Directions:
In a skillet over medium high heat warm two tablespoons of oil, add onion and sauté until soft. Add the squash, season with salt and pepper, and cook until tender, about 10 minutes. Transfer to processor and add cream, blending until smooth and creamy, adding more cream if necessary.
Bring water to boil. Warm remaining oil in skillet, add sausage and sauté until cooked through. Cook pasta until al dente. Drain and add to the skillet with sausage. Add squash sauce and toss to serve
