2 cups water
2/3 cup faro
1 cinnamon stick
1 ½ tablespoons olive oil
¾ cup minced onion
1 garlic clove, minced
½ cup dried figs, chopped
½ cup parsley
1 ¼ teaspoons kosher salt, divided
¾ teaspoon ground pepper, divided
1 teaspoon sherry vinegar
1/8 teaspoon allspice
1/8 teaspoon cloves
1 egg, slightly beaten
2 1lb pork tenderloins, trimmed

Directions:
Directions:
Combine first three ingredients in sauce pan, bring to boil, cover and simmer for 20 minutes. Discard cinnamon.
Add oil to pan and sauté onions over medium heat. Add garlic sauté additional minute.
Combine faro, onions, figs, parsley, ½ teaspoon salt and pepper and next 4 ingredients in medium bowl.
Slice pork lengthwise, cutting but not to other side. Open halves and pound to ¼ inch thickness. Top with faro mixture, roll from long side, secure with picks. Brown in fry pan, then into 425 degree oven for 15-20 minutes, until temp is 145 degrees
