2 pounds medium to small cooked shrimp
8 limes juiced
8 lemons juiced
2 T. orange juice concentrate
2 large tomatoes diced (I like cherry tomatoes cut in 1/4s)
1/2 red onion diced
1 bunch cilantro minced
1 jalapeno diced
4 large avocados chunked
2 large cucumbers diced

Directions:
Directions:
If shrimp is on the large side cut into about 1 inch pieces. Add the lime, lemon and orange juice to shrimp and refrigerate 4 hours if desired (I am usually in a hurry and skip this step). Stir all the ingredients except avocado and cucumber, in a serving bowl and let sit for 20 minutes before serving, add avocado and cucumber right before serving and salt and pepper to taste. Serve with tortilla chips or as a salad.
