4 lbs lamb shoulder chops cut 2” thick or stew meat
¼ cup olive oil
2 cups diced red onion
4 garlic cloves, minced
pinch of saffron
2 tablespoons tomato paste
1 cup dry white wine
1 cup coarsely chopped fresh mint

Directions:
Directions:
Season chops, put oil in wide deep skillet over medium-high heat, and lightly brown each side. Lower heat to medium, add onion and season with salt. Cook stirring often until softened, about 5minutes
Stir garlic, saffron and tomato paste into onions and cook 1 minute. Add wine and simmer for 2 minutes, then return lamb to skillet.
Add 4 cups water to cover meat and boil. Put on lid turn heat to low and simmer for about 45 minutes, until quite tender
Remove lid, raise heat to rapid simmer until juices have reduced by half and sauce has thickened. Adjust seasoning, stir in mint.
