4 slices center cut pork loin
11/2 cups panko
½ cup flour
2 eggs, lightly beaten
½ cup chopped parsley
zest of 1 lemon
1 tablespoon capers, rinsed and chopped
2 eggs, hard boiled, cooled and peeled
Lemon wedges

Directions:
Directions:
Pound meat to ½” thickness, season both side. Dust pork with flour on both sides and soak in egg mixture for 2 minutes. Place each slice on panko in a dish, covering thoroughly. Mix together parsley, lemon zest and capers in a small bowl. Chop hard boiled eggs and set aside.
Oil skillet on medium high, and place cutlets in pan for 2 minutes per side, until golden. Remove and drain on paper towel, season with salt and pepper.
Arrange cutlets on platter and sprinkle with parsley mixture, then chopped egg. Serve with lemon wedges.
