1 tablespoon oil
8 bone in chicken thighs
˝ teaspoon salt, divided
˝ teaspoon pepper, divided
1 tablespoon butter
˝ cup chopped onion
2 teaspoons chopped fresh thyme
1 cup chicken broth
4 teaspoons flour
1 teaspoon Dijon mustard

Directions:
Directions:
Preheat oven to 425. Heat skillet over medium high heat, add oil. Sprinkle chicken with ˝ teaspoon salt and pepper, add to pan and cook 4 minutes per side until lightly browned. Remove chicken from pan and place in glass baking dish and bake for 16 minutes. Reserve drippings.
Return skillet to medium high heat and add butter, onion and thyme and sauté for 5 minutes until tender. Combine 3 tablespoons stock and flour in small bowl, stirring until smooth. Add mixture to pan, bring to boil and cook 2 minutes until thickened. Remove from heat and add mustard and salt and pepper. Serve sauce with chicken.
