1 teaspoon olive oil
¾ cup chopped onion
¾ cup chopped fuji apple
2 teaspoons minced garlic
1 tablespoon cider vinegar
1 teaspoon chopped rosemary
1 pork tenderloin
½ teaspoon kosher salt
¼ teaspoon fresh pepper
1/3 cup chicken stock
3 tablespoon unfiltered apple cider
1 teaspoon Dijon mustard

Directions:
Directions:
Preheat oven to 425 degrees.
Heat oil over medium high heat, add apple, onion and garlic…sauté 5 minutes. Add vinegar and rosemary, cook 1 minute. Remove and place in bowl.
Slice pork lengthwise, cutting to but not through other side. Open and lay flat. Pound to even thinness, add salt and pepper. Spread apple mixture and roll up jelly roll fashion. Return to pan, cook 4 minutes until browned. Place in oven and bake for 15 minutes until temp is 145 degrees.
Add stock, cider, mustard and salt to pan and stir over medium high heat. Bring to boil and cook 2 minutes, serve sauce over pork.
