3 cups unfiltered, apple cider
˝ cup brandy
3 thyme sprigs
1 large shallot , sliced
2 tablespoons butter
2 teaspoons Dijon mustard
˝ teaspoon kosher salt, divided
˝ teaspoon freshly ground black pepper, divided
2 pork tenderloins, trimmed

Directions:
Directions:
Combine first four ingredients in saucepan and bring to boil. Cook until reduced to 1.2 cup, about 32 minutes. Remove from heat discard shallot and thyme. Stir in butter and mustard, 1/8 teaspoon of salt, ˝ teaspoon pepper.
Preheat oven to 475 degrees. Sprinkle pork with remaining salt and pepper, lightly coat with cooking spray. Cook in glass baking dish for 9 minutes, turn pork and brush with cider mixture and bake for 8 more minutes. 140 degrees internal temp…let rest , slice and serve.
