3 teaspoons oil
¼ cup finely diced onion
1 small clove garlic, minced
1 ½ cups baby spinach, chopped
1 lemon, divided
¼ cup coarse whole wheat bread crumbs/panko
¼ cup shredded gruyere cheese
2 tablespoons finely chopped almonds, toasted
1 large egg, beaten
2 teaspoons low fat mayo
salt and pepper
2 large tilapia filets

Preheat oven to 400° coat glass baking dish. Heat 2 tablespoons oil in skillet over medium heat. Add onion, cook stirring for 2 minutes until soft. Add garlic, spinach and cook until wilted, about 2 minutes.

Transfer to bowl and cool. Cut lemon in half and juice one piece over spinach. Add breadcrumbs, egg, cheese, mayo, almonds, salt and pepper.

Sprinkle fish with salt and pepper, and cut each filet in half. Place ¼ cup mixture in each and roll from the small end, and place seam side down in baking dish. Brush lightly with olive oil. Put slice of lemon on each piece. Bake for about 15 minutes.
