3 tablespoons oil
2 small leeks, halved lengthwise, thinly sliced
2 medium garlic cloves, minced
3 ½ cups chicken broth
1 cup grits
4 oz. extra sharp cheddar cheese, coarsely grated
2 oz. ¼ “ sliced pancetta, cut into 1/4x1’ strips
1 ½ lbs jumbo shrimp
¼ teaspoon cayenne
½ large green bell pepper, finely diced (3/4 cup)
1 tablespoon flat leaf parsley, finely chopped

Directions:
Directions:
In heavy duty pot heat 2 tablespoons oil over medium heat, add leeks and ¼ teaspoon salt, cook 4-5 minutes. Add garlic, stir briefly. Add chicken broth and ½ teaspoon salt, cover and bring to boil over high heat. Whisk in grits and return to boil, reduce heat and cook until grits absorb broth, about 5 minutes. Add the cheese and stir to melt. Season with salt and pepper, cover to keep warm.

Cook pancetta in 1 tablespoon oil, until starting to crisp, about 5 minutes. Place shrimp in bowl with cayenne and black pepper and toss. Add green pepper to skillet and cook 3-4 minutes. Add the shrimp and cook until pink, about 3-4 minutes. Stir in parsley. Distribute grits in 4 bowls, add shrimp mixture and serve. Serves four.
