1 cup quinoa, rinsed
2 cups water
1/4 teaspoon
1 teaspoon oil
1 medium onion, chopped
1 tablespoon minced ginger root
½ teaspoon curry powder
½ teaspoon cumin
1/4 teaspoon salt
¼ teaspoon cayenne pepper
1 lb uncooked shrimp, peeled and deveined
2 cups fresh snow peas, trimmed
3 tablespoons light coconut milk
1 tablespoon orange juice
¼ cup flaked coconut
¼ cup minced cilantro

Directions:
Directions:
Cook Quinoa according to directions. Heat oil in skillet, add onion, cook and stir about 4 minutes, add ginger, curry cumin, salt and cayenne and cook 1 minute more.

Add shrimp and snow peas to skillet and cook 3-4 minutes, until shrimp are pink and peas crisp tender. Stir in coconut milk and orange juice and heat thoroughly. Serve with fluffed quinoa, topping each serving with flaked coconut and cilantro.
