2 cups crushed cookie or cake crumbs
2 tablespoons unsweetened cocoa
1 cup confectioner’s sugar
1/8 teaspoon salt
1 cup finely chopped nuts
1 ½ tablespoons honey, maple syrup or corn syrup
¼ cup bourbon or rum
Unsweetened cocoa, confectioner’s sugar or superfine sugar for rolling

Directions:
Directions:
Place cookie crumbs, cocoa, sugar and salt in a mixer with a paddle: mix a low speed until combined. Add the nuts and syrup and mix 1 minute. Add the bourbon or rum, and mix for 2 minutes. The mixture will come together when you squeeze a bit of it. If it’s still dry or crumbly, add another tablespoon of bourbon or rum.

Scoop by the teaspoon and roll into balls. Roll the balls in cocoa, confectioner’s sugar, or fine sugar after shaping.

Yield 40 pieces.
