½ cup ricotta cheese, room temp
1/2 cup cream cheese, room temp
½ goat cheese, room temp
1 tablespoon sugar
1 large egg, room temp
1 large egg yolk, room temp
pinch fine sea salt
½ cup chopped, fresh basil
2 tablespoon olive oil
(Special pan 4 1/2 “ springform pan.)

Place rack in center of a 350 degree oven. Butter and flour sides of 41/2” spring form pan. Line bottom of pan with parchment paper. Wrap outside of pan with heavy foil. Place cheeses in processor and pulse, mixing well. Add the sugar, egg, egg yolk, and salt and blend until smooth. Add basil and pulse well. Pour the cheese mixture into the prepared pan. Place the pan in an 8x9” baking dish and pour enough water in to come halfway up the sides of the spring form pan. Bake until golden and the edges and center are firm and move slightly when gently shaken, about 50 minutes. Turn oven off and let cheesecake cool in the oven for 1 hour. Remove from oven, take foil off and cover with plastic wrap and refrigerate for 3 hours up to two days. Remove from pan and let come to room temp before serving, about 30 minutes. Brush top with pastry brush and olive oil.
