½ cup flour
½ cup corn meal
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon sugar
2 cups corn kernels
1 egg , beaten
1 cup plain yogurt
8 tablespoons melted butter
¼ cup crème fraiche

Directions:

Put first five ingredients in bowl. Grind 1 cup corn kernels into rough puree in processor, the add egg and yogurt, pulse to mix.
Add corn mixture to flout mix and stir together. Stir in 4 tablespoons melted butter, set aside for 5 minutes. Thin with milk if necessary.

Warm remaining 1 cup of corn with 4 tablespoon melted butter in small pan. Season with salt and pepper.
Make pancakes, cooking for 1 minute until bubbles appear and pancakes are light brown. Flip and cook 30 seconds more.
(Keep heat moderate or cakes will blacken)
To serve, add three cakes to each plate, top with heated corn mixture and crème fraiche, garnish with chives.
