2 ½ cups flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ teaspoons cinnamon
1 teaspoon cardamom
1 teaspoon ground ginger
3 large eggs
1 cup sugar
1 ¼ cups olive oil
1 cup plus 2 tablespoons honey
¾ cup red wine
2 teaspoons fresh grated ginger
1 ½ lbs ripe yellow plums
1 tablespoon chopped lemon thyme

Directions:
Directions:
Heat oven to 350 degrees, grease and flour 10 inch bundt pan
Combine flour, baking powder, baking soda, salt and spices. In separate bowl, combine eggs, sugar, oil, 1 cup honey, wine and fresh ginger. Mix into dry ingredients.

Pour batter into bundt pan and bake for 45 to 50 minutes until springy to the touch. Remove from oven and cool for 20 minutes. Then unmold cake and cool completely.

Pit and quarter plums and toss with remaining honey and thyme. Add honey to taste. Macerate for 30 minutes or more. Serve cake slices garnished with plums and thyme leaves.
