1 teaspoon sugar
11/2 cups flour
½ cup whole wheat flour
½ cup fine corn meal
2 ¼ teaspoons fine sea salt
1/3 cup plus ¼ cup olive oil
1 ¾ lbs apples, cored, quartered and sliced ¼ “ thick
¾ lb shallot, peeled, trimmed and sliced ¼ “ thick
¼ teaspoon pepper
5 thyme branches
¾ cup crumbled blue cheese

Directions:
Preheat oven to 425 degrees.
Mix yeast, ¾ cup warm water and sugar and proof. In bowl mix together flours, corn meal and 1/34 teaspoons salt. Make well in dry mixture and add yeast mixture and 1/3 cup oil. Mix and knead until smooth. Place in oiled bowl, cover and let rise until doubled, 1 hour.

Toss together apples, shallots and ¼ cup olive oil, black pepper and thyme. Spread on baking sheets and roast for 30 minutes until tender and golden. Increase oven to 450 degrees. Oil baking sheet and place dough, stretching to cover pan. Scatter apple mixture over crust and then add cheese. Sprinkle with oil, pepper and sea salt and bake 17-25 minutes until golden brown. Cool, cut into squares.
