½ cup unsalted butter (1 4oz stick)
1 cup sugar
2 eggs
2 ¼ cups flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1 cup shelled, salted pistachios
½ cup (3oz semisweet chocolate chips)
½ cup (3 oz white chocolate chips)

Preheat oven to 350°

Line baking sheet with parchment paper. In large bowl, cream together butter and sugar until pale and fluffy. Beat in eggs one at a time, then sift together the flour, baking soda, and cocoa, adding in the butter/sugar/eggs mixture. Gently stir in chocolate chips and pistachios.

Divide batter in half and form two logs 10 ½” x 3”. Bake for 25 minutes. Remove from oven and reduce temperature to 300°.

Spray loaves lightly with misted water. Wait 5 minutes, then cut logs diagonally about ½” wide slices. Place on parchment paper and bake for another 20-25 minutes.

Cool on rack. Melt white chocolate and drizzle over biscotti in criss cross pattern.
