2 cups flour
¼ cup Dutch process cocoa
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon allspice
¼ teaspoon salt
¼ teaspoon white pepper
¼ teaspoon ginger
1 cup sugar
3 large eggs
1 teaspoon vanilla
1 ½ cup finely chopped dried pears

Directions:
Directions:
Preheat oven to 350° Mix together first nine ingredients. Beat eggs and sugar together until very pale and thick, add vanilla. Mix dry and liquid ingredients together, fold in dried pears. Divide dough in half and shape into two 12 to 14 inch long by 2 inch logs.
Bake for 30 minutes until logs are firm and just beginning to crack on top. Remove and cool for 10
minutes. Slice logs diagonally. Reduce oven to 325° and and bake slices, cut side down for 7-8 minutes
