2 cups cooked plain rice, cold
2 cups whole milk
1 14 oz can coconut milk, well shaken
1/3 cup plus 2 tablespoons sugar
3/8 tablespoon kosher salt
3 ripe mangos, pitted, peeled and chopped (2 cups)
¼ teaspoon ground cardamom
¼ teaspoon vanilla

Directions:
Directions:
Bring rice, milk, coconut milk, 1/3 cup of sugar and the salt to boil, then immediately lower heat to maintain a simmer for about 20 minutes until pudding has thickened.

In skillet combine the mangos with ¼ cup water, the remaining 2 tablespoons sugar and the cardamom. Bring to a boil stirring until sugar dissolves, about 5 minutes. Crush mangos into a thick, chunky sauce.
Remove the rice pudding from the heat and stir in vanilla, swirl in the mango sauce and serve warm or cold.
