One 14 oz all butter puff pastry
1 stick unsalted butter
¾ cup sugar
12 golden delicious apples, peeled, cored, cut in half
crème fraische for serving

Directions:
Directions:
Roll out dough to 1/8 inch thickness and cut 12 inch circle. Place on baking sheet and refrigerate. Melt butter in 10” cast iron skillet. Add sugar and cook over moderately low heat, stirring occasionally until sugar is dissolved, about 2 minutes.

Remove from the heat. Arrange the apples slices upright in 2 snug concentric circles. Return to heat for about 30 minutes until an amber caramel forms.
Preheat oven to 350° Top the apples with the puff pastry and bake for 40 minutes until golden and apples are tender. Let cool for 15 minutes. Place plate over skillet and invert tart.

Serve with crème
fraische
