3 tablespoons lemon juice
¼ cup water
6 tablespoons tahini, stirred well
2 tablespoons olive oil, plus extra for drizzling
1 (14 oz.) can chickpeas, drained and rinsed
1 small garlic clove, minced or pressed
½ teaspoon salt
¼ teaspoon ground cumin
Pinch cayenne
1 tablespoon minced cilantro or parsley leaves

Directions:
Directions:
Combine lemon juice and water in small bowl. Whisk together tahini and 2 tablespoons oil in second small bowl. Process chickpeas, garlic, salt, cumin, and cayenne in food processor until almost fully ground, about 15 seconds. Add lemon juice/water mixture in a steady stream with machine running. Process for 1 minute more. With machine running, add oil-tahini mixture in steady stream, about 15 seconds. Transfer to serving bowl and sprinkle with cilantro, drizzle with olive oil and serve.

Roasted Red Pepper version:
Add ¼ cup roasted red peppers that have been rinsed and dried thoroughly, along with slivered almonds as garnish
