1 cup faro
¼ cup olive oil
3 tablespoons red wine vinegar
3 tablespoon finely chopped shallots
1/8 teaspoon freshly ground pepper
1 6 oz. slice deli smoked turkey (3/4” thick) cut into ½” pieces
½ cup diced, smoked cheese (Cheddar or Gouda)
1 cup chopped yellow pepper
1 large celery stalk, chopped
1 ripe, but firm avocado, diced
¾ cup slivered, soft sun dried tomatoes.

Directions:
Place faro in sauce pan, add water to cover by 2 “ and bring to boil. Stir, reduce heat to a simmer and cook, uncovered, until faro is tender, about 15-20 minutes. Drain and rinse with cold water.

Whisk oil, vinegar, shallots and pepper in large bowl. Add the faro, turkey, cheese, bell pepper, celery, avocado, and sun dried tomatoes. Toss to coat.
