1 cup faro
1 ½ lbs boneless chicken breast, cut into ½ inch cubes
4 teaspoons curry powder, divided
¼ teaspoon pepper
2 tablespoons olive oil
1 garlic clove, minced
1 cup canned pumpkin
½ cup chicken broth
½ cup raisins
¼ cup butter
½ teaspoon five Chinese spices
¼ cup apple butter
½ cup chopped cashews, toasted

Directions:

Cook faro according to package directions. Sprinkle chicken with 1 teaspoon curry powder and pepper.

Heat oil in a large skillet, and sauté chicken for 5-6 minutes until no longer pink. Add garlic and cook 1 minute longer.

Stir in pumpkin, broth, apple butter, five spice powder and remaining curry powder. Bring to a boil, reduce heat to simmer uncovered for 5-7 minutes. Stir cashews into cooked faro and serve with chicken mixture
