1 ½ tablespoons olive oil, divided
1 ½ cups faro
3 ½ cups low sodium chicken stock
3 links mild or sweet Italian sausage, casing removed
1 cup chopped red onion
2 cloves garlic, finely chopped
2 cups cremini or button mushrooms, quartered
2 cups packed baby spinach leaves
salt and pepper to taste
¼ cup chopped parsley
2 tablespoons chopped oregano

Directions:
Directions:
Heat 1 tablespoon oil over medium heat. Add faro and cook, stirring often 4-5 minutes. Add broth and bring to boil. Reduce heat to medium, cover and cook for 20-25 minutes until faro is tender and liquid is absorbed.

Meanwhile, heat 2 tablespoons oil in large skillet over medium high heat. Add sausage and cook, breaking into small chunks, until almost cooked through, 6-8 minutes. Add onion and garlic, cook until onions are translucent, about 5 minutes. Add mushrooms, toss well and cook until softened, 4-5 minutes. Remove skillet from heat and stir in spinach until wilted.

Stir parsley, oregano, salt and pepper into farro. Spoon onto plates and top with sausage mixture.
