1 cup quinoa
½ small onion, diced
¼ cup olive oil
2 tablespoons cider
2 tablespoons honey
Freshly ground pepper
3 medium carrots, peeled sliced thinly on diagonal
1 tablespoon apple cider vinegar
2 tablespoons finely grated lemon zest
½ cup pickled beets cut into matchsticks
2 tablespoons chopped dill
1 head bibb lettuce leaves torn

Directions:

Cook quinoa, adding onion during second phase covered.
Preheat oven to 450. Lightly spray baking sheet.

Whisk cider and honey in bowl to blend, season with salt and pepper. Add carrots and toss to coat.

Roast until tender, 15-20 minutes.

Whisk vinegar, lemon zest, and lemon juice in bowl Gradually add ¼ cup olive oil, stir until blended. Season. Add carrots, beets, dill, and vinaigrette to Quinoa, toss and serve.
