20 garlic cloves
olive oil
1 cup mayonnaise
3 tablespoons lemon juice
salt and pepper
¼ cup chives, minced

Fritters
1 ¼ cup flour
¾ cup shredded white cheddar cheese
salt and pepper
1 teaspoon garlic powder
2 large eggs
¾ cup cold beer
1 cup zucchini, 1 cup yellow squash, grated, drained for 15 minutes.
1 small onion, halved and thinly sliced
½ cup canola oil for frying

Directions:
Directions:
Heat oven to 375°, put garlic cloves in baking dish and add oil to cover. Roast until garlic is soft and golden, about 30 minutes. Cool. Drain garlic, reserving oil.

Process, add 1 tablespoon reserved oil and mayo, lemon juice, salt and pepper and puree.

Place in bowl and add chives.
